Beef Chow Mein

ingredients

350 g beef steak, sliced into very thin slices
8 mushrooms, fresh, washed and sliced with the stems
200 g bean sprouts, soaked, rinsed, and drained
200 g bamboo shoots, thinly sliced
3 scallions, sliced
2 cups beef broth
2 tablespoons cornstarch
1 teaspoon sesame oil
2 cups egg noodles, dried
1 eggs
vegetable oil for frying
Marinade
1 tablespoon soy sauce
1 teaspoon salt
1 tablespoon sugar

cooking method 

1. Combine the marinade ingredients together in a bowl then add the beef and let it marinate for at least 1 hour. Then drain the beef and reserve the marinade sauce.

2. Heat the sesame oil in a sauce pan, add the beef and cook for 4-5 minutes.

3. Combine the cornstarch and beef stock together in a bowl then add them, along with the remaining marinade sauce, to the beef.

4. Bring the beef mixture to a boil stirring well then reduce heat and add the vegetables. Simmer for 5 minutes.

5. Boil water in a pot and cook the noodles for 4-5 minutes, drain well. Deep fry noodles in vegetable oil. Remove noodles onto absorbent paper.

6. Beat the egg in1 tablespoon of water and cook in a lightly oiled pan to make a thin omelet and then slice it into small strips.

7. To serve, place the noodles first in a serving dish then add the beef mixture on top and the omelet strips as garnish.
