Burghul With Tomato

Healthy vegetarian recipe with typical burghul grain, tomatoes, and onions can be served as part of a main dish or a side

ingredients

2 cups bulgur
1 kg tomatoes, cut into small slices
2 1/2 cups water
2 large onions, sliced
1 teaspoon cumin
2 1/2 tablespoons olive oil
salt coarse

cooking method 

1. Fry the sliced onions in olive oil at medium fire for 5 mins

2. Add the tomatoes and coarse salt, let the tomatoe juice boil or add ¼ cup water

3. Add the remaining 2.5 cups of water until boiling

4. Once it starts boiling, add the burghul, the cumin and wait till evaporation (around 20 mins)

5. Serve cold or hot

Thanks for posting this, my mom gave me this recipe before I traveled but I forgot exactly how to do it, so I ended up finding it here! Light and healthy.

This is a nice light dish that I like to have in the evening. It tastes well, it fills the stomach, and it still is light to digest.
