Chicken Pizzaiola

Phenomenal

ingredients

1 boneless skinless chicken breasts
1 tablespoon vinegar
1 cup bread crumbs
1 egg, beaten
1 teaspoon italian dressing
1 pinch of salt
1 pinch of black pepper
1 teaspoon paprika
1 pinch of oregano
1 pinch red hot chili powder, optional
1/2 teaspoon onion powder, optional
1/2 teaspoon garlic powder, optional
1 cup oil, for frying
3/4 cup pizza sauce
4 cheddar cheese, slices
4 basil leaves, or springs

cooking method 

1. Trim fat from chicken breasts and cut lengthwise into 2 pieces. Cut each piece horizontally in the middle to make 4 thin slices of chicken.

2. Rub the chicken with vinegar and set aside for 2 minutes, then wash with water.

3. In a bowl, mix the breadcrumbs and all the spices: salt, black pepper, Italian seasoning, paprika, oregano and red pepper.

4. In another bowl, beat the egg with a fork.

5. Dip each chicken slice with egg mixture, then with breadcrumb mixture. Press chicken in breadcrumbs until it's all well coated. Set aside on a plate.

6. Repeat process with the rest of the chicken slices.

7. Heat oil, lower to medium and fry the chicken slices.

8. Plate each chicken breast slice in a plate, place 1 slice of cheddar on each.

9. Heat the pizza sauce and pour over the chicken and cheese.

10. Garnish with Basil springs and serve serve.

You can serve with french fries and coleslaw or baked potato or pasta depending on your taste.

I specified 0.75 cup pizza sauce for 4 slices chicken but you can spoon pizza sauce over the slices depending on your preference.
