Double Chocolate Cookies

I made this recipe from a variety of recipes I found, it's lighter in sugar than other recipes and the cookies have an exceptional taste thanks to the cocoa and the chocolate chips.

ingredients

2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
200 g butter, softened to room temperature, melt the butter if you prefer chewier textured cookies
2 tablespoons unsweetened cocoa powder
1 cup brown sugar, light
2 eggs
1 teaspoon vanilla extract
200 g semi sweet chocolate chips

cooking method 

1. Preheat oven to 275 degrees F. Line two large baking sheets with parchment paper.

2. Sift together the flour, salt, baking powder, cocoa powder and set aside.

3. Using a mixer; cream together the butter and brown sugar until thoroughly blended.

4. Add in the eggs and vanilla and mix until well blended and smooth.

5. Slowly blend in the flour mixture and mix until just combined. Do not over-beat.

6. Add the chocolate chips, and mix until they are evenly distributed throughout the batter.

7. Drop the dough by rounded 2 tablespoons, you can also use an ice cream scoop, onto the prepared cookie sheet, about 5 cm apart. Repeat until all dough is used.

8. Bake for 10 minutes in the preheated oven. The cookies should have golden brown edges and soft centers.

9. Remove from oven, and let cool on baking sheet.

10. Enjoy when they have cooled completely :-)

The cookies are enjoyed by the kids with a glass of milk!
