Fattoush: Traditional Lebanese Salad

A must try in the Lebanese salad world! A large variety of vegetables are cut in cubes and tossed with sumac, then sprinkled with fried pita bread bits.

ingredients

1 head romaine lettuce, shredded
3 medium tomatoes, diced
3 small cucumbers, sliced
6 radishes, sliced
7 scallions, chopped
1 bunch purslane leaves
1 bunch parsley, coarsely chopped
1/2 bunch mint leaves, coarsely chopped
1 1/2 pita bread loaves, cut into pieces then fried
1 tablespoon sumac
1/4 cup Vegetable oil for frying
For the dressing:
2 cloves garlic, crushed
1/2 cup lemon juice
1/2 cup olive oil
1/2 teaspoon salt

cooking method 

1. Mix all the vegetables together in a large bowl and sprinkle with sumac.

2. In a small bowl, mix the dressing ingredients together and pour over the vegetables. Mix well.

3. Add the fried pita bread pieces and toss gently.

4. Serve immediately.

This is my favourite salad! i just add some pomegranate syrup, and yummy!!!

Perfect! I was visiting my brother in the US and decided to try this recipe for him because he missed the taste of home ;) and it turned out wonderful, better than my own mum's! ;) am so glad i fell on it and fell on this site!
