Light grilled Chicken salad

ingredients

2 chicken breast without skin and bones, cut into thin strips
1/2 lettuce head, thinly sliced
1 green bell peppers, thinly sliced
1 cup fresh mushrooms, thinly sliced
1 cup corn
2 scallions, finely sliced
4 carrots, grated
1/4 cup parmesan cheese, grated
Dressing
3 tablespoons oil
2 teaspoons sugar
2 teaspoons vinegar
1 clove garlic
2 tablespoons lemon juice, equivalent to juice of half lemon
salt to taste
pepper to taste

cooking method 

1. Cook the chicken strips either on a grill or in the oven in a slightly oiled baking tray. Remove when well cooked on both sides. Let cool.

2. For the dressing, mix the ingredients together making sure that the sugar is well dissolved.

3. In a bowl, mix the lettuce, green pepper, mushrooms, corn, spring onions and carrots together then add the dressing and mix well.

4. Layer the chicken strips on top and sprinkle with the parmesan cheese.

5. Serve cold.
