Okra with Lamb Meat cubes

Although born and raised in Lebanon, I am originally an Iraqi, and to the Iraqees Okra is the queen of all vegetables. With time I have learned to mix between the Lebanese and the Iraqi way of cooking this scrumptious dish.

ingredients

1 kg fresh okra, washed with heads removed
1/2 kg lamb, cut into cubes
4 medium tomatoes, peeled and cut into slices
1 clove garlic, crushed
4 cloves garlic
1/4 cup fresh coriander, chopped
2 cinnamon sticks
1/2 lemon, squeezed
2 1/2 tablespoons vegetable oil
pepper
1 pinch ground cardamom
salt

cooking method 

1. In a pressure cooker fry meat cubes with 1 tbsp vegetable oil for 1 minute before adding cinnamon sticks, cardamom, salt and pepper. Add 1 litre of water and close pressure cooker cover securely. Cook for 45 minutes at highest pressure (achieved when steam starts escaping). Remove from heat and let pressure drop before opening cooker cover (achieved when all steam escapes).

2. Strain. Reserve the meat broth and place cooked meat cubes aside making sure you remove the cinnamon sticks.

3. In a small skillet fry crushed garlic and chopped coriander with ½ tbsp of vegetable oil.

4. In a deep cooking pot, fry the whole garlic cloves with 1 tbsp vegetable oil until golden then add the Okra, sliced tomatoes, lemon juice, and salt. Stir occasionally not by using a spoon but by shaking the pot and flipping ingredients in it until okra turns yellow in colour.

5. Add cooked meat cubes, fried garlic and coriander to the okra mixture. Add the meat broth and allow boiling on high heat for an additional 5 minutes.

6. Finally transfer okra stew to a serving dish

This dish is best served white rice.

This was a very good recipe which I was looking for and couldnt find on the web and it is very well described here however I took the okra from the freezer and it took longer- 20 minutes or so for the okra to cook well.
